A 12-day long sweet treat event would not be complete without brownies. So the 5th day of sweet treats is Christmas tree & melted snowman brownies! We’re using Kalia’s favorite brownie from allrecipes.com, called “Brooke’s Best Bombshell Brownies“. She’s a chocoholic and loves anything chocolate, so we had to use this recipe for this fun project!

This brownie is not fluffy or cake like. It is fudgy and thick, and will satisfy your sweet tooth. Chocolate lovers will rejoice!

Once the brownies have baked and cooled down completely, I used a round cookie cutter (for the snowman) and a knife to cut triangles (for the Christmas trees). The frosting I used is Ermine Frosting or butter roux frosting, a less sweet yet still extremely fluffy frosting – I used this frosting partly because the brownie is already so sweet. If time is short, you can also just use premade frosting (so convenient…lol) And what brings this to life are the sprinkles, they really make the brownies extra festive and fun!

Ingredients for the Brownies:

  • 1 cup unsalted butter, softened
  • 3 cups white sugar
  • 1 tablespoon vanilla extract
  • 4 eggs
  • 1 1/2 cups flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Ingredients for: Ermine Frosting or Butter Roux Frosting (Less sweet, but still so good)

  • 5 tbsp flour
  • 1 cup white sugar
  • 1 cup milk, warmed
  • 1 1/2 tsp vanilla extract
  • pinch of salt
  • 1 cup unsalted butter, softened

Instructions for the Brownies:

  1. Preheat oven to 350 F degrees.
  2. In a large bowl, combine all the softened butter, sugar, and vanilla extract and mix until light and fluffy.
  3. Next, add the eggs. Beat eggs in one at a time.
  4. In a separate bowl, sift dry ingredients (flour, cocoa powder, and salt). Add the chocolate chips.
  5. Now add the dry ingredients to the sugar, butter, and egg mixture. Gradually stir in flour mixture until blended.
  6. I placed parchment paper in the 9 x 13 baking dish (this will help take it out for cutting much easier) and lightly greased the parchment paper.
  7. Pour the brownie batter into the baking dish. The batter will be thick, so spread the batter around evenly.
  8. Bake for 35-40 minutes
  9. Once done, let cool for about 30 minutes. Then pull out the brownie using the parchment paper and place it on a cooling rack to cool completely.
  10. Once completely cooled, cut out your desired shapes. As mentioned above, I used a round cookie cutter for the snowman and used a knife to cut out triangles for the Christmas Trees. Note: they will not be perfect and smooth, the surface of the brownie will crack when cut, don’t worry it will be covered with frosting!

Instructions for the Frosting:

  1. Place flour and sugar in a large saucepan over medium heat. Cooking and stir constantly to cook the flour. For about 30 minutes.
  2. Slowly add in warm milk and whisk constantly until thick and then immediately remove from heat.
  3. Place roux mixture into a bowl and cover with plastic wrap, making sure the wrap touches the mixture. Let cool completely to room temperature.
  4. In a large bowl, add softened butter and use a hand mixer to beat the butter until pale yellow.
  5. Start adding the flour and sugar roux, one scoop at a time. Making sure each scoop is completely incorporated before adding the next scoop.
  6. Once all added, add the vanilla extract and salt. Mix again for another 2 to3 minutes until the frosting hold peaks. Now it’s ready to use.
  7. Add green food coloring to half the frosting to make green frosting for the Christmas Tree brownies!

Apparently, this frosting is an old fashioned frosting and is used when you prefer a less sweet frosting. I used the recipe from Recipe Tin.

We hope you enjoy these Christmas tree & melted snowman brownies.
