This is one of my go-to recipes when I really don’t feel like cooking. You know, those days when you just stare at your fridge and pantry and pray that dinner will make itself. I find myself doing this a lot lately! So if you ever find yourself in that position, try our Chicken and Peas White Pasta! It’s quick, easy, and delicious. My boys love having Chicken and Peas White Pasta for dinner because it is just so darn good. This recipe comes from a “cookbook” that was shared with me by my church branch while living on the small island of Dominica. I am sorry to say, however, that I do not know who to credit for this delicious meal!
I fell in love with this recipe because of how easy it is to make and how delicious it is. The ingredients are also very simple and you probably already have them in your pantry or fridge. It was hard to meal plan on the island because we never knew if the ingredients would be available. Some weeks the shipment to the island would be plentiful and then other weeks it was scarce. I remember buying 2-3 gallons of milk to freeze in the freezer just in case there wasn’t any milk in the next delivery! This recipe was a lifesaver because I always had the ingredients on hand. It also comes together very quickly.
When I’m done I like to sprinkle some red pepper flakes to add some heat. I also like to make homemade dinner rolls to go with this dish. It is not a healthy dish by any means, but it is oh so tasty! Enjoy!
Chicken and Peas White Pasta
Ingredients
- 2-3 chicken breast or boneless, skinless chicken thighs
- 1 tsp salt
- 1 tsp black pepper
- 16 oz spaghetti noodles
- 16 oz sour cream
- 2 c chicken broth
- 2 cans cream of chicken
- 1 1/2 tbsp garlic powder
- 1 c parmesan cheese
- 2 tsp black pepper
- 2 c sweet peas
- crushed red pepper for sprinkling
Instructions
Chicken
Season the chicken and bake in a toaster oven or oven for 40 minutes.
When done, cut into bite-size pieces and set aside.
Noodles
Cook as directed on package.
Sauce
In a large cooking pan over medium heat put in sour cream, chicken broth, cream of chicken, garlic powder, and parmesan cheese. Whisk ingredients over medium heat until all ingredients are combined.
Add in sweet peas to sauce and mix.
Assemble
When the sauce is cohesive, add the spaghetti pasta. Then add the chicken and mix it with the pasta.
Sprinkle with crushed red pepper.
