Fresh Spring Roll in a Bowl – Vermicelli Noodle Bowl

So what happens when you want spring rolls and don’t have the rice paper to wrap them in? You just throw everything into a bowl and have a salad! This vermicelli noodle bowl is basically a fresh spring roll in a bowl. If you haven’t yet, check out our fresh spring roll post here, the ingredients are very similar and just as delicious!

This dish was created by our Dad – it may be similar to a Vietnamese Vermicelli dish but it’s still quite different as well. He’s pretty creative in making delicious meals out of nowhere — so one night, we had all the ingredients to make fresh spring rolls, but he decided to mix it up and put everything into a bowl. We dubbed it as “Dad’s Cow Food” – because of all the fresh ingredients! The whole family loved it and still enjoys it to this day!

There really isn’t any specific way to put this dish together, just add all the ingredients into a bowl and enjoy!

Ingredients for vermicelli noodle bowl:

  • Rice Vermicelli Noodles
  • baby spring salad mix
  • cucumber
  • grated carrots
  • cilantro
  • mint
  • red cabbage
  • ground turkey or pork and shrimp- ** if the shrimp are large or extra-large, give them a rough chop.
    • oyster sauce
    • salt
    • black pepper
    • minced garlic
    • paprika

This dish is super versatile. You can add any vegetable and herb that you like. It’s also a great way to use leftover vegetables in your fridge. Have fun with it.

Dressing

  • Sweet chili sauce
  • Fish sauce
  • crushed roasted peanuts
  • lime juice
  • water

Prepping the noodles

In a big pot add water a little more than halfway. Put the pot over high heat. Once water is boiling, add noodles to the pot and give it a quick stir so the noodles won’t stick to each other. Continue to stir occasionally to keep them from sticking together and sticking on the bottom of the pot. The noodles should take about 15-20 minutes to cook. Make sure to check the readiness of the noodles. Once the noodles go from transparent to white and it’s soft to the bite, get it off the heat immediately. Take the pot of noodles to the sink and pour out the hot water. Add cold water to the pot to cool down the noodles. Keep the noodles in the pot with cold water and start to portion the noodles into small bundles and place them in a strainer.

Cooking the meat

In a pan add oil and garlic and cook for 30 seconds over medium-high heat. Now add your meat and cook until no pink is showing. At this time add the oyster sauce, salt, black pepper, paprika, and shrimp. Mix everything together and allow this to cook for 3-5 minutes. If your meat mixture is a little dry add about 3-4 Tbsp of water. Now turn off the heat, place the meat mixture in a bowl, and cover until ready to eat.

Dressing

Add the sweet chili sauce, fish sauce, crushed peanuts a squeeze of lime juice, and a splash of water in a small mixing bowl, and give everything a good mix. Taste and adjust to liking. If you want to add more spiciness just add slices of chili pepper.

Now just throw everything in a bowl. Noodles, vegetables, herbs, meat mixture and your dressing. Give everything a good toss and enjoy.

Ingredients

  • 14 oz. Rice Vermicelli Noodles
  • 5 oz. baby spring salad mix
  • 1 English cucumber sliced
  • 2 cups grated carrots-about 3 medium carrots
  • 2 cup of thinly sliced cabbage
  • 1 cup diced tomatoes
  • 1 bunch of cilantro
  • 1 bunch of mints
  • Meat Mixture
  • 2 1/2 Tbsp of oil
  • 1 tsp of minced garlic
  • 1/2 lb. ground turkey or ground pork
  • 1/2 lb. of medium-size shrimp
  • 2 Tbsp oyster sauce
  • 1/2 tsp of salt
  • 1/4 tsp black pepper
  • 1/4 tsp of paprika
  • 3-4 TBSP of water
  • Dressing
  • 1/3 sweet chili sauce
  • 3 TBSP fish sauce
  • 2TBSP lemon juice
  • 2 TSBP crushed roasted peanuts
  • 2-4 TBSP of water
  • *optional- for extra spiciness add sliced chili pepper

Instructions

Wash and prep vegetables and herbs. Set aside

Noodles

Make sure to check the readiness of the noodles. Once the noodles go from transparent to white and it’s soft to the bite, get it off the heat immediately. Take the pot of noodles to the sink and pour out the hot water.

Add cold water to the pot to cool down the noodles. Keep the noodles in the pot with cold water and start to portion the noodles into small bundles and place them in a strainer.

At this time add the oyster sauce, salt, black pepper, paprika, and shrimp.

Now turn off the heat, place the meat mixture in a bowl, and cover until ready to eat.

Dressing

In a small mixing bowl add fish sauce, sweet chili sauce, lemon juice, crushed roasted peanuts, and 2 TBSP of water. Give this a good mix. Taste and adjust to liking. If you want to add more spice add slices of chili pepper.

Now, assembly your bowl together. Add noodles to a bowl, top with vegetables and herbs. Add the meat mixture and then add the dressing. Give everything a good mix and enjoy.

    What a fantastic idea! I love spring rolls but I dont eat them as much as I am trying to avoid carbs! Great recipe!
