Pumpkin Chocolate Chip Cookies

Can you feel it? Pumpkin season (aka Fall) is here! Like so many people, it’s my favorite time of the year. I love the change of colors in the leaves, the cooler weather, and the upcoming Holidays! So to welcome in Fall, I want to share my favorite pumpkin chocolate chip cookies. I stumbled upon this recipe on Allrecipes.com many, many years ago (If you’d like to take a look at the original, you can find the recipe here.) This was when my hubby and I were at BYU and I was pregnant with my 2nd child. Oh, my sweet tooth was strong with my second child! All I did was bake goodies, eat them, and give them away. After finding this recipe, I ended up making it a few times a month…for a couple of months! So as a tradition, when it gets to be about this time of year, I bake these cookies to welcome in Pumpkin Season!

The texture of these pumpkin chocolate chip cookies is not like most cookies. It’s got more of a soft, cakey texture to it. And the flavor is A-mazing! Although this cookie is great right out of the oven, I think it tastes even better after sitting in an airtight container for a few days. I feel like this really helps the flavor settle in. I am also a die-hard chocolate kind of girl, so I usually use dark chocolate chips to enhance the flavor. But you do you and use whatever chocolate chips you like! I hope you enjoy it!

Gather all of your ingredients. I like making sure that I have all of my ingredients on the counter before I start so that I don’t have to keep walking back and forth to the fridge or pantry. It makes life easier when I bake!

First, you’ll want to mix all of your wet ingredients together along with the sugar. Just dump it in and mix until you get a nice cohesive batter.

Next, add in the dry ingredients and mix. The batter will be rather thick but just keep mixing.

The last thing you’ll do is fold in the chocolate chip cookies. Semi-sweet or milk chocolate chips work great with this recipe, but my favorite is dark chocolate chips! It gives the cookie a nice rich chocolate flavor.

Yum! I remember making this cookie for my co-workers once and they were all surprised with how much they liked this cookie. The flavor of cinnamon and pumpkin spice really shines through and the chocolate compliments these spices so well. The texture also adds a lot to this cookie! So soft and chewy. Ingredients

  • 1 c. pumpkin puree
  • 1 c. granulated sugar
  • ½ c. vegetable oil
  • 1 egg
  • 1 generous Tbsp. vanilla extract
  • 1 tsp. milk
  • 1 tsp. baking soda
  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • ½ tsp. pumpkin spice
  • ½ tsp. salt
  • 2 c. semisweet chocolate chips

Instructions

Preheat oven to 350 degrees F.

In a big bowl put pumpkin puree, sugar, vegetable oil, egg, milk, and vanilla extract. Mix together until cohesive.

Add flour, baking soda, baking powder, ground cinnamon, pumpkin spices, and salt into pumpkin puree mixture. Mix well until all ingredients are incorporated.

Fold in chocolate chips.

Drop dough by the spoonful onto a cookie sheet lined with parchment paper.

Bake in the oven for 10-12 minutes.

The cookies will come out very soft. You can tell when the cookies are done when they do not look wet. The cookies will be light in color.
