Simple Turkey Taco Chili

This simple turkey taco chili is amazing for the cold winter months when all you want to do is wrap yourself up in a blanket, sit by the fire, and don’t have to worry about dinner. But wait, you’re the adult and that means that you do have to make dinner. Don’t worry we have you covered.

For this recipe, all the ingredients go into one pot and everything comes together in less than 30 minutes. Top it off with your favorite taco toppings and you’re all set. I also really enjoy having this as leftovers and think it actually gets better on the second day. I promise you that this recipe is a keeper, so I hope you give it a try. Enjoy!

  • ground turkey
  • small onion ( diced)
  • bell pepper ( diced)
  • garlic ( minced)
  • diced tomatoes- canned or fresh
  • diced green chiles
  • corn (drained)
  • pinto beans ( rinsed and drained)
  • black beans (rinsed and drained)
  • refried beans
  • taco seasoning
  • paprika
  • cumin
  • chicken broth
  • salt and pepper
  • toppings of your choice**diced cube cheese, chunks of avocado, diced tomatoes, diced green onion, chopped cilantro, sliced jalapenos, and sour cream.

The list of ingredients is long but rest assured that this simple turkey taco chili is straightforward. You are simply dumping everything in a big pot and letting it simmer away. That’s it! And you end up with this amazing, delicious chili. (Also, if you haven’t tried diced cubed cheese in your chili it’s so much better than shredded cheese. This healthy turkey chili is made with a blend of pinto and black beans as well as corn. It’s the perfect meal to serve for game day or as an easy dinner!

Ingredients

  • 3 Tbsp olive oil
  • 1 small onion ( diced)
  • 1 bell pepper ( diced)
  • 2 cloves garlic ( minced)
  • 1 lb. of ground turkey
  • 3 1/2 Tbsp taco seasoning
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 Tbsp salt
  • 1/4 tsp black pepper
  • 2 (10 oz) cans diced tomatoes - or about 2 1/2 cups of fresh diced tomatoes
  • 1 can ( 7oz) diced green chiles
  • 1 (15oz) can corn ( drained)
  • 1 (15oz) can pinto beans ( drained)
  • 1 (15oz) can black beans (rinsed and drained)
  • 1 (15oz) can refried beans
  • 1 bay leaf
  • 3 cups of chicken broth
  • toppings of your choice- diced cheese cubes, avocado, diced tomatoes, diced green onion, chopped cilantro, jalapenos, lime, and sour cream.

Instructions

Place a large stockpot on the stovetop over medium-high heat and add oil to the pot. Add bell pepper and onion and saute until the vegetables have softened. Cook for 2-4 minutes. Now add minced garlic and cook for another minute.

Add the ground turkey to the pot and cook until the meat is no longer pink.

Add in all the spices to the pot and give everything a good stir.

Now add diced tomatoes, diced green chilies, corn, pinto beans, black beans, refried beans, paprika, cumin, salt, and pepper. Give this a good mix until everything is well incorporated.

Last, add in chicken broth and one bay leaf.

Let the chili simmer for about 15- 20 minutes over medium-low heat, stirring occasionally. Before you turn the heat off give the chili a test taste and adjust the spices to your liking. And don't forget to take out the bay leaf before serving.

Now it's ready to be served. Finish off with your favorite taco toppings. Enjoy.

Notes

Freezer-Friendly Instructions: The chili can be frozen for up to 3 months. Before serving, defrost it in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot.

    Great recipe! I love that you use refried beans in your chili recipe. I’ve never done that before, so I’m so excited to try it. I bet it really adds more flavor to the chili. Thanks for sharing your recipe!
