Easy Egg-cado Breakfast Sandwich

Breakfast is my favorite meal of the day! I usually don’t have breakfast until about 11 AM though, so I really enjoy this hearty dish. My boys also love a hearty breakfast so they loved it when I make it for them. Nenji cleverly thought of the name: Egg-cado Breakfast Sandwich. I thought was the perfect name for this sandwich! I love this dish because you can alter it to your liking.

Stacking the Egg-cado Sandwich

For the base, you can use any kind of bread. When I want to make it a little more healthy, I’ll use Ezekiel bread, which has fewer carbs and tastes just as good. The next layer is just good old avocado mash it up into a paste. I usually do half an avocado for a piece of bread. For the meat, my family likes to add bacon or deli meat to our breakfast sandwich. If we use deli meat, I usually cook the deli meat to add a little more flavor. Or you can skip the meat altogether if you’d like!

As for the egg, I have a special way of cooking it. It’s somewhere in between a fried egg and a sunny side up egg…I call it “sunny side in between egg”. Make sure you have a good amount of olive oil in your pan and the pan is hot. Crack your egg and let it cook until you can see the bottom is starting to brown around the edges. Next, you will flip your egg over and cook the top just for a few minutes. You do not want to cook the egg all the way through, cook it just enough so that the top and bottom are cooked but the yolk is still runny in the middle. Place the egg on top of the meat, sprinkle it with some black pepper and add a squeeze of lemon juice, and voila! A hearty and delicious Egg-cado Breakfast sandwich!

Ingredients

  • 2 slices of bread
  • avocado-mashed up
  • deli meat (or meat of your choice)
  • 2 eggs
  • 2 Tbsp Olive Oil
  • pinch of salt
  • sprinkle of cheese
  • pinch of black pepper

Instructions

Cook the 2 slices of bacon, set aside

Toast bread

Mashup avocado spread on toasted bread

Stack bacon on next

Egg

Put oil in a pan along with a pinch of salt, heat until pan is hot

Crack eggs and cook until egg whites are browning

Flip the egg over and cook the egg for another minute

Put eggs on the toast with avocado and bacon

Sprinkle cheese on top

Pinch of black pepper on top
