This simple homemade ham fried rice is loaded with ham and vegetables sautéed in butter and olive oil. We promise you it’s so much better than take-out.

For as long as I can remember, the moment I smelled onions being sautéed with butter and olive oil I knew that my mom was making her amazing ham fried rice. I would run into the kitchen and stand next to her just to smell the deliciousness coming from the pan. I don’t think I have come across any fried rice that is as good as my mom’s recipe. I think her secret is using butter.

Just like my mom’s amazing egg roll recipe, found here, her Ham fried rice is also a must-have at all our family gatherings. It’s easy to put together and a crowd-pleaser.

Ingredients:

  • Butter and olive oil
  • Diced ham-ham is great to freeze. During the holidays when ham goes on sale buy in bulk and freeze it. It will last about 3-5 months. And you’ll always have ham for this amazing recipe.
  • Frozen peas and carrots- this is what I like in my fried rice, but you can add corn, green beans, etc.
  • 1-2 days old long-grain rice: Don’t use fresh rice to make fried rice or you’ll end up with mush.
  • Salt and black pepper
  • Sauces: oyster sauce, black soy sauce, low-sodium soy sauce, and sweet soy sauce
Ingredients for ham fried rice.

How to make ham fried rice:

  1. Add butter and oil to a pan on medium-high heat.
  2. Once the butter has melted add onion and cook until translucent.
  3. Now add ham and cook until warm through. Cook for 2-3 minutes.
  4. Add frozen peas and carrots and cook until thawed. Cook for 3-5 minutes.
  5. Now, add in the sauce and mix with the rest of the ingredients.
  6. Add the rice to the pan and make sure to break up big chunks. You want to make sure the rice is covered in the sauce.
  7. Once everything is incorporated, turn off the heat and plate.
  8. *Optional-Garnish with green onion, cilantro, a sprinkle of chili flakes, and a squeeze of lime.

You can enjoy the fried rice as is, or you can also add some fried eggs. I don’t add my eggs directly to the fried rice because I have some picky eaters, so I will make some fried eggs and put them on the side for whoever wants some.

Fried egg confetti :

  1. Crack four eggs in a bowl and add a pinch of salt.
  2. Beat eggs until blended.
  3. Add oil to an 8-inch frying pan on medium-high heat.
  4. Once the pan is hot pour half of the egg into the pan. You want to spread the egg around the pan and let it cook for about 1-2 minutes.
  5. Now flip and cook on the other side for about 30 seconds. Once done, flip the egg pancake on a cutting board.
  6. Repeat steps 2-5 for the rest of the egg.
  7. Once you have your two egg pancakes lay them on top of each other and cut them in half and then into quarters. Now thinly slice them and now you have fried egg confetti to add to your ham fried rice.

This simple homemade ham fried rice is loaded with ham and vegetables sautéed in butter and olive oil. We promise you it's so much better than take-out.

Ingredients

  • 4 cups of cooked rice- use at least one-day-old rice
  • 1 TBS of butter
  • 2 TBS of olive oil
  • 2 cups of diced ham
  • 2 cups of frozen peas and carrots
  • Salt and black pepper
  • Optional- 4 eggs. See Instructions for fried egg confetti
  • cilantro, green onion, and lime wedges to garnish- optional
  • Sauce for ham fried rice
  • 2 TBSP of oyster sauce
  • 1 tsp of low sodium soy sauce
  • 2 tsp of dark soy sauce
  • 1 tsp of sweet soy sauce
  • Add all the sauces together in a small bowl and set aside.

Instructions

1

Add oil and butter to a pan over medium-high heat.

2

Once the butter has melted add the onions to the pan. Also, add 1/2 tsp of salt and 1/4 tsp of black pepper.

3

Cook onion until it becomes translucent. Cook for 2 minutes.

4

Now add diced ham and cook for another 2 minutes. Since the ham is already cooked you just want to warm it through.

5

Add your sauce mix to the pan and mix until well combined.

6

Add peas and carrots and let it cook for 3-4 minutes or until the vegetables are warm through.

7

Add rice to the pan and make sure to coat the rice with the sauces and break up any big chunks of rice. Cook for another 4-5 minutes. Then give your fried rice a taste. It's important to always taste your food. At this time you can add more salt or black pepper to your liking.

8

Now it's ready to serve. Garnish with green onion, cilantro, a sprinkle of chili flakes, and a squeeze of lime.
